I’m not very domestic. Normally if there’s some food that I want to get, I go buy it . It’s never really been in my nature to get recipes or whip something up. But of course now that I have a kid I try to think of better ways to feed her. We didn’t totally just go organic or anything but I just make better choices.
And now Addy is in daycare and they really encourage finger foods. She’s been feeding herself for a while but when it comes to veggies we’ve been reverting back to purees because she’s not ready for the fork and spoon. She feeds herself air on them just fine but when you add mashed potatoes a mess ensues and then you get messy cause she doesn’t like her hands dirty and immediately wipes them on you.
So I thought I should make her some veggies. We have the rice cooker that steams veggies but I don’t even want to read how to do that and what do you steam besides broccoli, which I don’t even eat. I took advice from Scout, who sings all the time that her favorite food is sweet potatoes, and bought a couple.
But what the hell do you do with sweet potatoes. I just eat them at Thanksgiving or at my aunt’s house. I never fiddled with one. Let me tell you. It is ridiculous! I wanted to do sweet potato chips but I don’t have a) a mandolin or b) patience. It was enough work juts to peel them! They ended up cubed or on the floor. Then coated with oil, sprinkled with cinnamon and nutmeg, a pinch of sea salt, and dusted with sugar. Those were my exact measurements. In the oven at 350. Our oven is as reliable as a Kim Kardashian marriage (zing!) so I checked it a few times. I guess I was thinking like regular potatoes cause those take forever at high temps but sweet potatoes only took 25 minutes. And they are delicious!!!
They’re the right texture I was looking for. They don’t just crumble, Addy should be able to eat them easily, but they’re solid enough for her to feed herself.
I’m super pleased. Now I just hope that she likes them and they will be a fairly regular snack. Or even just to go along with dinner. Whatev. I got a whole tray of them and aside from the nutmeg and potato peeler I had to buy, I spent $1.91. WINNING!
